The Balistreri Girolamo is a Sicilian anchovy fishing and processing company founded in 1947 in Aspra, Sicily. It was created by Nonno Battisti Balistreri, a fisherman from Aspra who had previously established a small canned fish business according to ancient tradition. Nonetheless, he perfected the preservation recipe using Sicilian sea salt, which helps the anchovies keep their beautiful pink color while using minimal salt.
