The Balistreri Girolamo is a Sicilian anchovy fishing and processing company founded in 1947 in Aspra, Sicily. It was created by Nonno Battisti Balistreri, a fisherman from Aspra who had previously established a small canned fish business according to ancient tradition. Nonetheless, he perfected the preservation recipe using Sicilian sea salt, which helps the anchovies keep their beautiful pink color while using minimal salt. Balistreri is a very popular brand that is worth discovering.
FISHING AND HAND PROCESSING
Anchovies are caught only in the best months off the coast of Sicily. They are then processed close to the fishing site in their processing plant according to ancient traditional Sicilian techniques. Balistreri follows the Marine Stewardship Council (MSC) standards for sustainability and has all the customary food security certifications.
